Description
The TOP 10T static pasteurizer oven is a mixed convection/direct steam oven that allows pasteurization of the pasta thanks to the possibility of producing steam inside the cooking chamber. This static pasteurizer oven is equipped with touch control and can contain 10 GN1/1 60x40cm trays. TOP 10T is an economical alternative to the traditional pasteurizer as it allows the oven to be used not only for common cooking procedures but also for the pasteurization of modest quantities of pasta. By bringing the combi oven to a certain temperature in steam mode and with ventilation at maximum speed, a pasteurizer of freshly produced pasta can be obtained. At the end of the pasteurization, the oven will dry the pasta by means of ventilation. The structure is in stainless steel and the door is equipped with double glass. The oven is designed to adjust the speed of the fans, the steam discharge and manage up to 6 cooking cycles in automatic sequence. The basic guidelines for correct pasteurization will be communicated by us together with the user manual.
