Sofia fresh pasta machine with centrifugal kneader, suitable for the production of various types of pasta for domestic or professional use.  Ideal for crumbled dough and gluten-free mixtures, Sofia can produce up to 5 kg of dough per cycle. The press with kneading vat is centrifugal and allows a faster mixing and a hydration of the static dough, decreasing the oxidation of the dough and thus maintaining the original color of the dough. Supplied with the machine are four bronze dies to make maccheroni, tagliatelle, caserecce and fusilli. Sofia is equipped with a safety system that, thanks to a state-of-the-art electronic board, allows the rotation movement to be reversed for 15 seconds and stops the machine in case of wrong dough.


OPTIONAL ACCESSORIES:

- Dies in bronze or with teflon inserts, of different sizes and types
- Electronic cutter for short pasta (please note that the electronic pasta cutter for short pasta cannot be used on some dies: special shapes that require a clean cut with the scraper or shapes that have a central extrusion insert)
- Kitchen kit: shovel for bread dough, pizza, cakes. They are supplied with blades for chopping and a butterfly shovel ideal for the preparation of creams, fillings and sauces
